At our farm The Knitted Forest, we believe the richness of life is simple — it’s the freedom that comes from being connected to nature, to each other, and to the land we restore.

In 2021, we (Elze & Gerbrand) left the Netherlands with our young sons to begin a regenerative journey in the green hills near Oviedo, northern Spain. What started as a dream of self-sufficiency and regeneration quickly turned into a reality of challenges and discovery. We found a plot once treated with chemicals, the traces of its past still visible in jerrycans of Roundup left in the barns, and set out to bring it back to life.

We rebuilt the old stone ruin into our home, created a barn for our sheep, and restored the traditional hórreo into a cozy two-person cabin. Step by step, we planted and rebuilt: a 500-tree food forest, a 75m² greenhouse, and a 3,000m² no-dig market garden. Our flock of Merino and Border Leicester sheep grazes through the orchard, weaving wool and soil health together in a regenerative silvopasture system.
How we do it: by growing apples, vegetables, and wool through regenerative farming that brings back biodiversity, restores soil, and nurtures community.
What we create: regenerative playgrounds — living spaces where nature, people, and ideas connect. A place where research, craftsmanship, and local collaboration take root.
We are building not only a farm, but a way of life that demonstrates how regeneration can be practical, beautiful, and deeply human. Here, the threads of soil, fiber, and food are knitted together into a landscape of renewal.
The Knitted Forest – growing life, one connection at a time.
